In a small bowl, whisk together the orange juice, dijon and maple syrup, set aside.
In a large ovenproof skillet, heat the olive oil over moderately high heat. Add the tenderloin and cook until browned on the bottom, about 5 minutes. Turn the pork over and add the apples and oj mixture.
Place in oven, roast for 20 minutes (basting a few times with pan juices) or until a meat thermometer registers 135. Remove from oven and let pork rest 10 minutes before slicing.
Serve with apples and pan sauce drizzled over the top.
