Slow-Cooker Vegetarian Chili
 
Ingredients
  • 1 large yellow onion, chopped
  • 4 garlic cloves, peeled and finely chopped
  • 1 tablespoon chili powder
  • 1 tablespoon ground cumin
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • 1 28 oz. can fire-roasted tomatoes
  • 1 15.5 oz. can black beans, drained and rinsed
  • 1 15.5 oz. can kidney beans, drained and rinsed
  • 1 medium sweet potato, peeled and diced
  • 4 large carrots, peeled and chopped
  • For serving: sour cream, shredded cheese, diced avocados, corn chips, or fresh cilantro
Instructions
  1. In a (4-6 qt.) slow cooker, combine all ingredients plus 1 cup water. Cover and cook on low until the sweet potatoes and carrots are tender and the chili has thickened, approx. 7 hours. Alternatively, cook on high for 4 hours.
  2. Serve with your favorite toppings.
