Serves: Approx. 3 cups
  • 1 cup loosely packed kale leaves, cleaned and de-stemmed
  • ½ tablespoon olive oil
  • 4 ripe avocados, halved and pitted
  • 1 lime, juiced
  • ½ cup chopped red onion
  • ¼ cup loosely packed cilantro leaves
  • ¾ teaspoon salt
  • 1 small jalapeño, seeded and chopped, optional
  • ¼ cup chopped tomatoes
  1. Massage kale with olive oil and set aside while you prepare other ingredients.
  2. In the bowl of a food processor, combine massaged kale, avocados, lime juice, onion, cilantro, salt, and jalapeño if using. Pulse until desired consistency - a few pulses for extra chunky and longer for extra smooth (how my girls like it)
  3. Place kaleamole in a bowl and stir in tomatoes. Add additional salt or lime juice to taste if you prefer. Serve immediately.
