1 cup loosely packed kale leaves, cleaned and de-stemmed
½ tablespoon olive oil
4 ripe avocados, halved and pitted
1 lime, juiced
½ cup chopped red onion
¼ cup loosely packed cilantro leaves
¾ teaspoon salt
1 small jalapeño, seeded and chopped, optional
¼ cup chopped tomatoes
Instructions
Massage kale with olive oil and set aside while you prepare other ingredients.
In the bowl of a food processor, combine massaged kale, avocados, lime juice, onion, cilantro, salt, and jalapeño if using. Pulse until desired consistency - a few pulses for extra chunky and longer for extra smooth (how my girls like it)
Place kaleamole in a bowl and stir in tomatoes. Add additional salt or lime juice to taste if you prefer. Serve immediately.
