Maple Roasted Pork Tenderloin with Apples www.redkitchenette.comCozy fall nights call for cozy fall food, and this Maple Roasted Pork Tenderloin with Apples is just the ticket! It’s warming and filling, sweet and savory, delicious and healthy. Even better, it’s a cinch to make. It all comes together in 1 pan…who doesn’t love that? I season the pork, brown it, toss the apples in, and then pop it in the oven. Voila, that’s pretty much it. And it’s a big hit with kids. They can even help chop the apples if they’re old enough. I serve it with mashed sweet potatoes and it’s cheers all around. If you give it a try, I’d love to know what you think!

Maple Roasted Pork Tenderloin with Apples
Serves: 3-4
 
Ingredients
  • 1.5 lb pork tenderloin
  • 1 tsp kosher salt
  • 1 tsp dried thyme
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ¼ cup orange juice or apple cider
  • 3 tab Dijon mustard
  • 2 tab pure maple syrup
  • 2 tab extra-virgin olive oil
  • 2 medium red apples, sliced into wedges
Instructions
  1. Preheat oven to 425.
  2. Season pork with salt, thyme, onion and garlic.
  3. In a small bowl, whisk together the orange juice, dijon and maple syrup, set aside.
  4. In a large ovenproof skillet, heat the olive oil over moderately high heat. Add the tenderloin and cook until browned on the bottom, about 5 minutes. Turn the pork over and add the apples and oj mixture.
  5. Place in oven, roast for 20 minutes (basting a few times with pan juices) or until a meat thermometer registers 135. Remove from oven and let pork rest 10 minutes before slicing.
  6. Serve with apples and pan sauce drizzled over the top.
