This oatmeal makes a nutritious breakfast for kids of all ages, but it is especially fantastic for beginning eaters 9 months and up. I make large batches and freeze into cubes for an easy and quick breakfast that is fresh, healthy and delicious. Oats are high in fiber, calcium and protein and are a great way to incorporate whole grains into your little one’s diet. And mixing in a puree of perfectly ripe summer peaches creates just the right amount of tart with just the right amount of sweet. And because fresh peach puree is so good, I would suggest you make a little bit extra to spoon over yogurt with a drizzle of honey for a healthy toddler snack. Or perhaps a bellini for you…
- 1 cup whole quick cooking oats (I use these)
- 2 cups water
- ½ tablespoon pure maple syrup, optional
- ½ teaspoon pure vanilla extract
- ¼ teaspoon cinnamon
- ⅛ teaspoon ground ginger
- 2 ripe peaches, pitted and roughly chopped
- Grind oats in a small food processor until powdery.
- Bring water to a boil in a small saucepan. Slowly pour in ground oats and whisk until smooth. Lower heat and add maple syrup, vanilla, cinnamon and ginger. Continue to stir and cook over low heat for 5 minutes.
- Meanwhile, rinse out food processor and add chopped peaches; puree until smooth (leaving a few chunks for older babies).
- Stir in peach puree to cooked oatmeal. Let cool and serve.
