Flourless Black Bean Chia Seed Brownie www.redkitchenette.comAs mentioned in my last post, Audrey loves helping out in the kitchen.  Whether we’re making pancakes, muffins, or these delicious brownie bites, she is right there to help me measure, mix, and pour.  She’s a great sous chef and these couldn’t be easier for her to help out with.  They’re a cinch to make, use very few ingredients and are ready in no time at all.  And did I mention they are incredibly rich and chocolatey but have absolutely no flour, dairy or refined sugar?  Oh, and they’re filled with good for you black beans and chia seeds.  Yep, a winner we can’t get enough of.  Perfect little two-bite wonders that are as delicious as they are healthy.

Flourless Black Bean & Chia Seed Brownie Bites
Serves: Makes 24 brownie bites
 
Ingredients
  • 1 tablespoon chia seeds
  • 1 15oz. can black beans, drained and rinsed well
  • 1 egg
  • 3 tablespoons water
  • ¼ cup pure maple syrup
  • ½ cup cocoa powder
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 teaspoon baking powder
  • ¼ cup coconut oil
  • ½ cup dark chocolate chips
Instructions
  1. Preheat oven to 350. Spray a mini-muffin tin with nonstick cooking spray - I use a coconut oil one.
  2. Process chia seeds in a coffee or spice grinder until they form a powdery consistency (this step is not necessary, I just feel it improves the texture).
  3. Add chia powder to the bowl of a food processor along with black beans, egg, water, maple syrup, cocoa powder, vanilla and salt. Process until a smooth batter forms.
  4. Stir in the chocolate chips. Spoon batter into prepared mini-muffin pan. Place in the oven on top or middle rack for 25-30 minutes. Cool completely in pan before serving.

    I made these and they turned out great! They were gone in 2 days between two kids. The recipe didn’t specify when to add in the baking soda or coconut oil so I just added it in step 3. 🙂
