Audrey loves fish. Every time I make it for her she will point to it and say, “ooooohhhhhh”. Then again, she points to a lot of things these days saying that…. But this cod dish I am quite certain she loves (and genuinely means that oooohhhh) as she can’t seem to get it in her mouth quick enough. I love it because it’s loaded with nutrients, including omega-3’s, protein, and vitamins B, D, A and K. It’s also a perfect starter fish for babies. It’s light, mild, and flaky. It’s easy to prepare and cooks in a snap. Crusted with flavorful breadcrumbs, tarragon and orange zest, it’s a delicious way to prepare fish for you and your little one.
Herb-Crusted Cod
9 months + up/Finger Foods
Makes 2 (2 oz.) servings
- 1 tablespoon breadcrumbs (preferably whole grain or gluten-free)
- 1/4 teaspoon orange zest
- 1/4 teaspoon dried tarragon
- Pinch of salt and pepper
- 4 oz. piece of cod
- 1 teaspoon extra-virgin olive oil
On a small plate, combine breadcrumbs, zest, tarragon, salt and pepper. Pat both sides of fish dry with a paper towel and place in breadcrumb mixture. Press down and flip, ensuring breadcrumbs have coated both sides of fish. Meanwhile, heat oil in a skillet over medium-high heat. Once hot, add breaded fish and cook 2-3 minutes per side, until golden brown and opaque throughout. Flake with a fork into small pieces and enjoy.
